Watermelon Lime Popsicles



To me, the 4th of July means fun in the sun and watermelon! YUM! But what do you do with the leftover watermelon? In years past, I have ate myself sick on watermelon to prevent it from turning to that rubbery mess that you find in the bowl after three days in the fridge. This year I was determined to come up with a better plan, including a great way to amp up your water!

Ingredients:

4 cups of cubed watermelon (I have a great tip on making quick work of this!)
2 limes juiced

Recipe:

Cube watermelon:

Cut the watermelon into quarters.



Cut along the rind on both sides.



Cut the watermelon into horizontal wedges. Repeat on opposing side.



Cut the watermelon into vertical sections.



And there you have it! Perfectly cubed watermelon. 

Toss the cubed watermelon and juice of two limes in a blender and let her rip.

Pour into Popsicle molds (or ice cube trays for flavored water) freeze. This usually takes 1/2 a day for the Popsicles, but just a few hours for the ice cubes.
