After watching an episode of everyone's favorite whining, bald, four year old, (if you don't know who I'm talking about, consider yourself lucky) Emily decided she had to make lemonade, from lemons. This wouldn't be such a horrible idea, if it weren't for the fact that neither do we drink lemonade, nor does she like it. So I racked my brain for something that she could help me make that involved squeezing lemons. I really didn't do that much racking before I landed at lemon and blueberry raw fruit and nut bars. They are so darn good, and so easy to make, even a three year old can (help) do it!
Ingredients:
1 cup raw pecans
1 cup raw almonds
1 cup pitted dates (I exploited my three year old to pit mine, cheaper that way!)
1 cup dried blueberries
2-3 Tbsp fresh squeezed lemon juice (one lemon)
1 Tbsp lemon zest (one lemon)

Let her rip! You are looking to just break them down, not make butter. 1 minute should do the trick.
Pit the dates if necessary. This is super easy. Take one between your fingers and press down until you feel the pit. Tear the date in two as you push the pit out. Tada!
Add pitted dates.
Process until combined. You will have to scrape down the sides a few times. You want to process them into a gummy, grainy paste. About 2-3 minutes total.
Line a pan with parchment or wax paper. Press mixture into the pan. It helps if you wet your fingers first.
From here, just flip them out, and cut into bars.
