Gingerbread Protein Bars



I recently became a die hard fan of Advocare Gingerbread Bars. The sad truth to this is they are a seasonal item and if you didn't stock up and find yourself at the bottom of an empty box, you now have to wait until December to surrender to this scrumptious seasonal treat. Though there is no substitute to the real thing, I believe I have succeeded at a recipe for a close second!

Ingredients:

2 cups pecans (or 1 1/2 cups pecan butter)
1 cup vanilla protein powder
1/2 quick oats
1/4 cup ground flaxseed
1/4 cup molasses
3 Tbsp water
1 Tbsp ground ginger
2 tsp cinnamon
1/4 cup white choc chips, melted (OPTIONAL)

Instructions:

Process pecans in a food processor or blender until oils release and the texture becomes smooth and creamy. This can take between 5-10 min depending on your appliance. You can skip this step all together if you have pecan butter on hand.

Add in molasses ginger and cinnamon. Process until combined.

Move mixture to a mixing bowl.

Mix in protein powder and quick oats. At this point you will have a crumbly mixture.

Mix in water, 1 Tbsp at a time, until dough forms.

Press into a parchment lined baking pan or dish.

Cover and refrigerate for 1-2 hours. This will allow the oats to absorb excess oils.

Flip out and cut into bars.

Enjoy as is or dip bars in melted choc.

Store in refrigerator.
